Two Delicious Ways of Chicken
Katsu and Karaage both pertain to Japanese fried chicken. But they are not prepared the same way.
Karaage is actually a Japanese technique of cooking meat, fish, especially chicken, that are deep fried in oil. Karaage chicken is generally popular, the small pieces are lightly coated with seasoned wheat flour or potato starch mix before frying in a light oil. The foods are marinated before coating with the seasoning mix. The process is similar in technique to the preparation of tempura. In Japan potato starch (or katakuriko) is most commonly used as a coating for deep frying.
The dish is inspired by Chinese fried chicken recipes; it’s a delicious izakaya or bento box favourite. It’s crunchy on the outside and juicy and tender on the inside. It is served with a squeeze of lemon juice and often with a side pot of mayonnaise. Eaten hot or cold, karaage is easy to make. Thighs have more flavour and are generally less dry, though chicken wings are also a great option as well as breasts. This Japanese fried chicken is a popular appetizer or main dish at home or in restaurants and often found in a bento box.
Chicken katsu is also known as katsu chicken, tori katsu, or panko chicken because the crispy fried cutlet of meat is made with flaky Japanese panko breadcrumbs. Katsu is a Japanese dish which is very popular in metro areas of the United States. Chicken katsu is one of many Western foods that has been adopted and adapted to suit local tastes. The dish is a key part of Japanese cuisine.
While karaage is usually leg marinated in soy and sake before frying, chicken katsu is sliced breaded breast served with katsu sauce – basically a thick Worcestershire-like concoction made from apple puree versus karaage’s mayonnaise and lemon. Katsu is more like chicken tenders from a box, while karaage is more like what we think of as fried chicken.
The dish is primarily made with pork cutlet, which is the popular tonkatsu. But of course there’s chicken and seafood and meat. Many people prefer chicken katsu made with tender chicken breast as a healthier alternative to tonkatsu. Katsu can now be found everywhere from convenience store takeaway bento boxes, to yoshoku (Western-style Japanese food) eateries and katsu specialty restaurants.
